Title: Hot Sauce
Post by: PenPho on May 30, 2010, 02:09:51 PM
So, in an attempt to find something new that wasn't just hot for the sake of hot, but actually had some good flavor, stumbled across Iguana Gold. (http://www.hotsauceworld.com/iggolispepsa.html)

Pretty awesome.

Any other stuff out there that isn't just hot, but actually has some good flavor?

I'm a big fan of Sriracha (hot cock) also, but was looking for something a little less overpowering.

I think it's from the same company that distributes sriracha but the Sambal Oelek hot chili paste is incredible.

I had this (http://www.hotsauceworld.com/hsw1108.html) last weekend.  I couldn't feel my mouth for about 20 minutes and drank about a half gallon of milk trying to get some sensation back.  But for the first two seconds, it tasted pretty good.

Anything by "Dave" I've found to be completely ridiculously hot.

More of a novelty than anything I'd actually want to use.

All hot sauce talk starts and ends with hot cock.

Well, this one did start with it, but there are times that it's just too overpowering in flavor. I think it's a fantastic hot sauce, but it very quickly becomes the dominant flavor of whatever you're eating.

You clearly need to learn moderation.

I like to toss a drop or two of Dave's Insanity into my various sauces (tomato, chili, salsa, whatever) but no more than a drop or two (and I mean the smallest drop possible).  That will kick up the spice level without incinerating your tongue, but maybe you would want to test it out on some unwitting schmuck before you try it, just to make sure it's not too crazy spicy.

Fork might know about this one (http://sweatnspice.com/wp-content/uploads/wpsc/product_images/dinosaur_bbq_wango_tango.png) -- absolutely freaking delicious, and undoubtedly spicy.

In light of TEC's recent admission that Tabasco is the greatest hot sauce ever, I saw an article on Yahoo a few weeks back (http://shine.yahoo.com/event/floridanaturals/taste-test-the-best-hot-sauces-1685601/?pg=44) that anointed Frank's Red Hot as the best overall hot sauce out there.

Not having had Frank's in years, I went out and got some, and am here to report that this article is false.

It is definitely not the best hot sauce, by any stretch.

But it's better than Tabasco.

The article does list Sriracha as the best "Medium" sauce out there, which is pretty accurate, though I think it's certainly every bit as hot as Frank's (or other non-habanero/insanity sauces).

Frank's is more vinegary than hot. It's barely hot at all. Sriracha is hotter for my taste. I still maintain, though it's not a sauce, that the Sambal Oelek paste is one of the best hot condiments around.

I once made a hot lime pickle that ate through the lid of the Ball jar while it was aging. It was savage, but perhaps unsafe for consumption because of the residual lid in the mix.

As usual, 1970s British cookbooks offer ready alternatives for those who would carp about such nonsense. I shall not address these further, though, instead to suggest that the meat-including hot condiment pokkum koch'ujang sounds interesting.

If anyone can find this stuff, it's really awesome.
Plus, all-natural and only has about 5-6 ingredients and all are easily identifiable.

http://blogs.ocweekly.com/stickaforkinit/2013/07/hot_sauce_lead.php

QuoteOver the past week or so, the foodie world's been abuzz over a report from the University of Nevada, Las Vegas (http://news.unlv.edu/article/study-hidden-dangers-hot-sauce) showing that there are high levels of lead in Mexican hot sauces. Researchers bought 25 brands of hot sauces in Latino grocery stores around Las Vegas and put them under the microscope to see how much lead they contained.

The answers? You can't find their full results (published in the Journal of Environmental Science and Health) online, because it costs a lot of money, and the review doesn't even allow academic databases to host their papers until 18 months after they get published. They ranked them according to those whose contents "exceeded 0.1 ppm lead, "the current FDA action level for lead in candy," per the report.

Luckily, I know people in Tepito who got me a piratería version of the report, so behold the five most dangerous hot sauces that UNLV researchers found...

When we were in New Orleans earlier this month we found a store on Royal Street that sold nothing but hot sauces.  You could walk up and down the aisles sampling.  I was shopping for a present for one of my sons who loves the stuff.  After tasting about a dozen I bought Melinda's XXXX Habanero hot sauce.  I wanted flavor in addition to heat and while this was about as hot as most of those that I tasted it had a garlicky taste as well.  http://www.melindas.com/store.html
