The actor who plays Abed is fantastic.  And Chevy Chase is actually funny for the first time in at least 10 years. 

Annie: "Shirley, that was the most racist thing I've ever heard."

Jeff: "Pierce will beat that in one minute."

The only characters on the show that aren't very good are Annie and Shirley.

Am I missing some reference or is that not the kind of meta-humor I was talking about at all?

I was referring to the implied comparison of Winger to Ryan Seacrest, when every other joke on The Soup involves McHale relentlessly ripping on Seacrest.

Or Pierce saying of Britta "she's ugly!" a la Clark in Vacation.

This show is kind of like Arrested Development in this respect (think Barry Zuckerkorn jumping the shark, or Ron Howard's occasional self-references).
