I have to say I am as excited about the Anthology films as I am the trilogy itself. Rogue One is a great concept (the story of the Rebel black ops team that stole the plans to the first Death Star). The Han Solo prequel will come down to the success of whoever tries to pull off Young Harrison Ford. They haven't said what the third planned anthology film is yet, but my guess is something involving Boba Fett.

Rogue One is interesting. Biggest challenge: We already know how the story ends and we pretty much know who will live (Wedge, Porkins, Biggs, etc.) and who dies (any character we don't see in 4, 5 or 6).
